When it comes to professional culinary knives, the Japanese Brieto knives are in a class of their own. The knife's stainless steel handle instantly takes on body temperature and feels like the natural extension of your hand. The blade is made of rustproof AUS-6M Mono Steel*. The cryogenic hardening process applied to these knives makes the steel exceptionally fine-grained, resulting in an extremely sharp and durable blade. Handle made of stainless steel 18/8**. Hardness 58 HRC, double-bevelled.
