Originally conceived by the spice experts at Gewürzmühle Rosenheim for game and forest dishes, as well as tuber vegetables, this barbecue rub harmonises equally well with beef, lamb, veal and game liver, fish, grilled cheese, grilled and roast potatoes or grilled celery. The aromatic base of the blend is formed by juniper berries with their ethereal, resinous, floral scent of the forest, as well as South Indian Malabar and Indonesian long pepper for peppery, warm notes with hints of tobacco, leather and smoke. The fruity-fresh, berry components of pink shinus berries and hibiscus blossoms are rounded off by the herbal, pine-like spiciness of sage. The added sea salt gives this rub a round barbecue flavour. When used as a classic dry marinade, we recommend about 30 to 40 grams of spice preparation per kilogram of meat.
