The vinification: This wine is produced from hand-picked Gruener Veltliner grapes and comes from the steep slopes of the Wachau Valley in Austria. The unique climate in this part of the Wachau, together with the large temperature fluctuations between day and night, which reach up to 25 °C in autumn, favour the development of the grapes’ special aroma. After the selective harvest of the fully ripe grapes, the mash is fermented in stainless steel tanks. The full-grape processing and spontaneous fermentation using natural yeast ensure slow maturation and complete naturalness. The least possible mechanisation ensures gentle pressing of the grapes. Long contact with the yeast is essential for the production of storable wines.

The wine: The wine flows into the glass in a light straw yellow colour with sparkling reflections. The scent contains Williams pears, pineapple and pink grapefruit, enhanced by fine mineral notes and the characteristic peppery aroma. Light notes of Speckbirne pears and lemon zest on the palate, with elegant, finely woven wine acidity, well balanced, wonderfully drinkable and full of character. Crisp and racy with great melting texture, full but delicate with impressive length - a bear of a wine.

The food: The Gruener Veltliner (»The Powerful Bear«) harmonises perfectly with summer salads, asparagus and Asian-inspired recipes, but also with a classic Viennese Schnitzel. We recommend drinking the wine at a temperature of between 8-10 °C.

The winery is located in the municipality of Spitz an der Donau in the world-famous Austrian wine-growing region of Wachau, about 80 kilometres west of Vienna. It was first mentioned in documents in the 12th century and has been in the family since 1833. Growing up in his parents' vineyard, Sighardt Donabaum has been familiar with the cultivation and production of fine wines since childhood. Despite his attachment to the region and his parents' business, he simultaneously felt a longing for the faraway. He thus decided to live a life as a forester and hunter, completely in harmony with nature, far away from his home, in North America. Training as a forester brought him a little closer to his goal of living in the vastness of Canada. But despite his wanderlust, his passion for wine always remained. His experience as a winemaker, forester and independent mind guarantees unique wines and allows Sighardt Donabaum to break with tradition again and again - in pursuit of genuine, unmistakable quality. The grape sets the ideal of taste. To come as close as possible to this principle, all wines are processed naturally and left untreated. Apart from care, experience and a passion for the highest quality, nothing is added.
