This »Sir Charles Henry Darling« wine is completely unique. The wine is named after and dedicated to Sir Charles Henry Darling who was Governor of Cape Colony at the time Darling Cellars was founded. He was a passionate campaigner for human rights and was called »the people's governor«.
The vinification: The wine is produced from Cabernet Sauvignon (70 %) and Merlot (30 %) grapes sourced from the best bush vines in the Darling area in South Africa. First, this wine was aged for 12 months in French oak barrels and additionally for one year in the bottle before being released.
The wine: A really great red wine with a beautiful balance of fruit and oak aromas, delicate scents of black fruits, cedar, honey, liquorice, chocolate and tobacco, rich and complex but at the same time of really great finesse.
The food: This harmonious and well-structured red wine goes particularly well with lamb, beef and veal dishes, but is also fantastic with mature cheeses. It can already be enjoyed now, but at the same time has a very good storage potential.

    Darling Cellars was founded in 1949 under the name Mamreweg Wine Cellar and is located north of Cape Town in the Darling District on the west coast of South Africa. The vineyards themselves are Darling Cellar's No.1 source of inspiration. From deep granite soils dominated by bush vines derive the best grapes for wine production, which are carefully selected. The cool breeze from the Atlantic provides a cooler climate which allows the production of special wines that stand out for their fruit and elegant style. At Darling Cellars, winemaking is considered a craft and an art in which nature itself plays the greatest role. The Darling Cellars winemakers aim to keep the technical influence on the grapes as little as possible on their way through the first careful selection, pressing, fermentation and maturation. The head oenologist puts it this way: »What nature gives us each year; we try and get into the bottle with passion and honour."
