Stellenview Great Five Reserve Cabernet Sauvignon 2019

The vinification: Cabernet Sauvignon is a French grape variety from the French Bordelais, the landscape around the wine-growing region of Bordeaux, and was first mentioned in French documents as early as 1635. The grape is a natural cross between »Cabernet Franc« and »Sauvignon Blanc«.Especially in the milder climate around and in Stellenbosch, which is extremely positively influenced by the Benguela Current, the Cabernet Sauvignon vines feel at home. The best grapes are selected for the wine from various vineyards in the coastal region of the Western Cape, which is known for its unsurpassed quality. The grapes for this wine were carefully harvested by hand in the cool morning hours. This procedure serves to protect them from the intense heat of the day. After a cold maceration lasting two to three days, the mash is fermented for about a fortnight. After malolactic fermentation, the wine matures for another 12 to 24 months in French oak barrels.
Tasting notes: With its deep dark, ruby red colour, the Cabernet Sauvignon is powerful and dignified in the glass, just like the lion in the wilds of Africa. Fruit-driven aromas of juicy red cherries and a ravishing bouquet of fragrant vanilla, coconut and fresh blueberry hit the nose. It has a refined balanced palate, fresh blueberry notes, an elegant hint of cedar, and subtle nuances of coconut, accompanied by silky tannins to a long lasting and smooth finish. A wonderfully stylish wine that will develop magnificently over the next few years.Food pairings: Excellent with roasted or grilled red meat, game dishes with aromatic mushrooms and mushroom sauces, pasta and pizza or even with an aromatic mature cheese. We recommend drinking the wine at a temperature of between 16-18 °C.
